Ingredients

2 cups brown rice cereal

1 cup creamy peanut butter

1/2 cup honey (or maple syrup for vegan option)

1/4 cup unsweetened cocoa powder

1/2 cup mini chocolate chips (dark or milk chocolate)

1/4 cup chopped nuts (almonds, peanuts, or walnuts)

1/2 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

Melt Wet Ingredients: In a medium saucepan over low heat, combine the creamy peanut butter, honey, cocoa powder, and a pinch of salt. Stir continuously until melted and smooth, ensuring it doesn’t boil.

Mix in Dry Ingredients: Remove the saucepan from heat and stir in the vanilla extract. Add the brown rice cereal, mini chocolate chips, and chopped nuts to the mixture. Stir gently until all the cereal is evenly coated.

Press Mixture into Pan: Pour the mixture into the prepared baking dish. Use a greased spatula or your hands to press down firmly and evenly, creating a compact layer.

Chill: Allow the bars to cool at room temperature for about 30 minutes, then place them in the refrigerator for an additional 1-2 hours until fully set.

Slice and Serve: Once firm, lift the bars out using the parchment overhang and slice into squares or rectangles. Store in an airtight container at room temperature or in the fridge for a firmer texture.
