250g halloumi cheese, sliced into 1/2-inch thick pieces

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

Lemon wedges, for serving

Olive oil, for frying

Begin by preparing your assembly line: Set up three shallow bowls. In the first bowl, place the flour seasoned with salt, pepper, garlic powder, and smoked paprika. In the second bowl, whisk the eggs until well beaten. In the third bowl, add the panko breadcrumbs and dried oregano.

    Heat a generous amount of olive oil (about 1/4 inch deep) in a large skillet over medium heat. You want the oil hot enough that a breadcrumb sizzles when dropped in but not so hot that it smokes.

      While the oil is heating, start dredging the halloumi slices. First, coat each piece in the seasoned flour, shaking off any excess.

        Next, dip the floured halloumi into the beaten eggs, ensuring it’s completely coated.

          Finally, press the halloumi into the panko breadcrumbs, ensuring an even and generous coating on all sides.

            Once the oil is ready, carefully place the breaded halloumi slices into the skillet without overcrowding. Fry them for about 2-3 minutes per side, or until they are golden brown and crispy. You may need to do this in batches, depending on the size of your skillet.

              Once cooked, transfer the crunchy halloumi to a plate lined with paper towels to drain any excess oil.
