Crunchy Chili-Lime Tofu Cubes

1 block (14 oz) firm tofu, drained and pressed

1/4 cup cornstarch

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

Juice of 2 limes

Zest of 1 lime

1 tablespoon chili powder

1 teaspoon smoked paprika

1 tablespoon soy sauce (or tamari for gluten-free)

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions
 

Prepare the Tofu: Once the tofu is drained, wrap it in a clean kitchen towel and place a heavy object on top to press out excess moisture for at least 15 minutes. This helps in achieving a crunchier texture.

    Cube the Tofu: Slice the pressed tofu into small cubes, approximately 1-inch in size.

      Coating Mixture: In a medium bowl, combine the cornstarch, salt, black pepper, chili powder, and smoked paprika. Mix well to ensure the spices are evenly distributed.

        Toss the Tofu: In a large bowl, gently toss the tofu cubes with the olive oil, lime juice, lime zest, and soy sauce until well coated. Then, sprinkle the cornstarch mixture over the tofu and toss again until all cubes are evenly coated.

          Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

            Bake the Tofu: Spread the coated tofu cubes in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

              Serve: Remove from the oven and let the tofu cool for a few minutes. Serve the crunchy chili-lime tofu cubes garnished with fresh cilantro and lime wedges on the side for an extra zesty kick.
