Crunchy Chili Lime Popcorn

1/2 cup popcorn kernels

2 tablespoons coconut oil (or any oil suitable for popping)

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1 teaspoon lime zest (freshly grated)

1 tablespoon lime juice

1 teaspoon salt (adjust to taste)

1 tablespoon nutritional yeast (optional for a cheesy flavor)

1 tablespoon granulated sugar (optional for a hint of sweetness)

Fresh cilantro (for garnish, optional)

Instructions
 

Pop the Corn: In a large pot, heat the coconut oil over medium-high heat. Add a few popcorn kernels to the pot and cover it with a lid. Wait until the kernels pop to know the oil is hot enough.

    Add Kernels: Once tested kernels have popped, add the remaining popcorn kernels to the pot. Cover it fully with the lid, leaving a small gap for steam to escape. Shake the pot occasionally to ensure even cooking. Popcorn is done when the popping slows to about 2 seconds between pops.

      Prepare Seasoning: While the popcorn is popping, in a small bowl, mix together the chili powder, smoked paprika, lime zest, lime juice, and salt. If using, also include the nutritional yeast and sugar for added seasoning.

        Combine: Once the popcorn is done, remove it from heat and transfer it to a large mixing bowl. While the popcorn is still warm, drizzle the lime juice over the popcorn and quickly sprinkle the spice mixture on top. Toss the popcorn gently but thoroughly to ensure an even coat.

          Cool and Serve: Allow the popcorn to cool for a couple of minutes before serving. Optionally, garnish with fresh cilantro for an added touch of freshness.
