1/2 cup BBQ sauce (your favorite)

1 cup cooked quinoa

1 cup fresh spinach

1/2 cup cherry tomatoes, halved

1/2 cup corn (canned or frozen)

1 avocado, sliced

2 tablespoons chopped fresh cilantro

1/4 teaspoon salt

Prepare the Tofu: Begin by cutting the pressed tofu into bite-sized cubes. In a bowl, toss the tofu cubes with olive oil, salt, and black pepper until evenly coated.
