4 cups green cabbage, thinly sliced

2 cups red cabbage, thinly sliced

1 cup carrots, julienned

1 red bell pepper, thinly sliced

1 cup green onions, chopped

1 cup fresh cilantro, chopped

1/2 cup roasted unsalted peanuts, coarsely chopped

1/4 cup sesame seeds

1/4 cup sunflower oil

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon honey or agave syrup

1 tablespoon freshly grated ginger

1 tablespoon sesame oil

Salt and pepper, to taste

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the green cabbage, red cabbage, carrots, red bell pepper, and green onions. Toss well to mix all the colors and textures together.

    Make the Dressing: In a separate bowl, whisk together the sunflower oil, rice vinegar, soy sauce, honey or agave syrup, grated ginger, and sesame oil. Season with salt and pepper to taste.
