Crockpot White Bean and Sausage Chowder

1 lb Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

3 celery stalks, diced

4 cups vegetable or chicken broth

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 cup frozen corn

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper, to taste

1 cup heavy cream

Fresh parsley or chives, chopped (for garnish)

Brown the Sausage: In a skillet over medium heat, remove the sausage from its casings and crumble it as you cook. Brown the sausage until no longer pink. This should take about 5-7 minutes. Once browned, transfer it to the crockpot.

    Sauté the Aromatics: In the same skillet, add a little olive oil if needed, then sauté the diced onion, garlic, carrots, and celery for 3-4 minutes until they begin to soften. Transfer the vegetables to the crockpot.

      Add Remaining Ingredients: To the crockpot, add the broth, white beans, corn, dried thyme, oregano, bay leaf, and season with salt and pepper. Stir well to combine all the ingredients.

        Cook: Cover the crockpot and set it to cook on low for 6-8 hours, or on high for 3-4 hours. The chowder is ready when the vegetables are tender and the flavors have melded together.

          Finish with Cream: About 30 minutes before serving, stir in the heavy cream to give the chowder its creamy consistency. Taste and adjust the seasoning if necessary.
