Crockpot Sweet Corn & Ham Chowder

4 cups fresh or frozen sweet corn

2 cups diced ham (pre-cooked)

1 large onion, diced

2 cloves garlic, minced

3 medium potatoes, peeled and diced

4 cups chicken broth

1 cup heavy cream

1 tsp dried thyme

1 tsp smoked paprika

Salt and pepper to taste

3 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Vegetables: Start by peeling and dicing the potatoes, onion, and mincing the garlic. If using fresh corn, cut the kernels off the cob.

    Layer in the Crockpot: In a large crockpot, add the diced potatoes, sweet corn, diced ham, diced onion, and minced garlic.

      Add Liquids and Seasonings: Pour the chicken broth over the mixture. Stir in the thyme, smoked paprika, salt, and pepper, ensuring everything is well combined.

        Cook: Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the potatoes are tender.

          Add Cream: About 30 minutes before serving, stir in the heavy cream. If you prefer a thicker chowder, you can mash some of the potatoes against the side of the crockpot with a fork.

            Serve: Once done, taste and adjust seasoning if needed. Serve hot, garnished with chopped green onions and parsley.
