Ingredients

1 pound ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

2 cans (15 oz each) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (28 oz) crushed tomatoes

2 cups chicken or vegetable broth

1 tablespoon chili powder

2 teaspoons cumin

1 teaspoon smoked paprika

1 teaspoon oregano

Salt and pepper to taste

2 cups shredded cheddar cheese (plus more for serving)

Tortilla chips (for topping)

Fresh cilantro, chopped (for garnish)

Fresh lime wedges (for serving)

Instructions

Brown the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat and add to the crockpot.

Sauté Aromatics: In the same skillet, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent. Transfer to the crockpot.

Add Beans and Corn: In the crockpot, combine the black beans, kidney beans, corn, crushed tomatoes, and broth. Stir well to blend all ingredients.

Season the Soup: Sprinkle in the chili powder, cumin, smoked paprika, oregano, and season with salt and pepper. Stir again to mix thoroughly.

Cook the Soup: Cover and cook on low for 6-8 hours or high for 3-4 hours, until flavors meld and soup is heated through.

Add Cheese: About 30 minutes before serving, stir in the shredded cheddar cheese, allowing it to melt and incorporate into the soup.

Serve: Ladle the soup into bowls. Top with more shredded cheese, crushed tortilla chips, and fresh cilantro. Serve with lime wedges on the side for squeezing over the soup.
