Ingredients

1 lb cooked turkey breast, shredded or chopped

4 cups turkey or chicken broth

2 medium carrots, diced

2 ribs celery, diced

1 medium onion, chopped

2 cloves garlic, minced

1 medium sweet potato, peeled and diced

1 cup butternut squash, peeled and diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup corn kernels (fresh, frozen, or canned)

1 tsp dried thyme

1 tsp dried sage

1/2 tsp black pepper

1 tsp salt (adjust to taste)

3 bay leaves

1 tablespoon olive oil

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions

Prep the Ingredients: Begin by preparing all your vegetables. Dice the carrots, celery, onion, sweet potato, and butternut squash. Trim and cut the green beans.

Sauté Aromatics (Optional): In a skillet, heat the olive oil over medium heat. Add the chopped onions, garlic, and sauté for about 3-4 minutes until onions are softened and translucent. This step adds depth of flavor but can be skipped if you're short on time.

Combine in Crockpot: In your crockpot, combine the cooked turkey, sautéed onions and garlic (if used), carrots, celery, sweet potato, butternut squash, green beans, and corn.

Add Seasonings and Liquid: Pour in the turkey or chicken broth, ensuring that all the ingredients are submerged. Add the thyme, sage, salt, black pepper, bay leaves, and apple cider vinegar into the mix.

Cook the Soup: Cover the crockpot and cook on low for 6-8 hours or on high for 4-5 hours, or until the vegetables are tender and the flavors are melded.

Final Adjustments: Once the cooking time is up, taste the soup and adjust the seasoning if necessary. Remove and discard the bay leaves.

Serve: Ladle the warm soup into bowls, garnish with freshly chopped parsley, and enjoy a cozy bowl of autumn goodness!
