4 large russet potatoes, peeled and cut into thin fries

3 tablespoons olive oil

1 teaspoon sea salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

Zest of 2 limes

Juice of 1 lime

1 tablespoon chopped fresh cilantro (optional, for garnish)

Lime wedges (for serving)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

    Prepare the Potatoes: In a large bowl, soak the cut fries in cold water for at least 30 minutes. This step helps to remove excess starch and will make your fries crispier.

      Seasoning Mix: In a small bowl, combine the sea salt, black pepper, garlic powder, paprika, and lime zest. Stir well to mix the dry ingredients.

        Drain and Dry: After soaking, drain the fries and pat them dry thoroughly with paper towels to remove excess moisture.

          Toss with Oil and Seasoning: In a sizable bowl, toss the dry fries with the olive oil. Then, sprinkle the seasoning mix over the fries and toss until the fries are evenly coated with oil and spices.

            Bake the Fries: Spread the seasoned fries evenly on the prepared baking sheet in a single layer, ensuring they’re not crowded (this helps them crisp up). Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.

              Add Zesty Lime Flavor: Once done, remove the fries from the oven and immediately squeeze the juice of one lime over the hot fries, tossing gently to coat.
