1 block (14 oz) firm tofu, pressed and drained

1 tablespoon cornstarch

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

1 bell pepper (red, yellow, or green), sliced

1 medium onion, sliced

2 cloves garlic, minced

1 tablespoon fresh lime juice

4 large whole wheat tortillas or wraps

1 avocado, sliced

Fresh cilantro, for garnish

Salsa or hot sauce, for serving

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. In a large bowl, toss the tofu cubes with cornstarch, olive oil, smoked paprika, cumin, chili powder, salt, and pepper until well coated.

    Crisp the Tofu: Heat a non-stick skillet over medium-high heat. Add the coated tofu cubes in a single layer and cook for about 5-7 minutes, turning occasionally until they are golden brown and crispy on all sides. Remove the tofu from the skillet and set it aside.

      Sauté the Vegetables: In the same skillet, add a little more olive oil if needed. Add the sliced onions and bell peppers and sauté for about 5 minutes until they become softened and slightly charred. Add the minced garlic and cook for an additional 30 seconds until fragrant.

        Combine Ingredients: Return the crispy tofu to the skillet with the sautéed vegetables. Drizzle with fresh lime juice, and toss everything gently to combine. Cook for another minute to warm it through.
