Ingredients

1 lb Brussels sprouts, trimmed and halved

3 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (optional, for a kick)

2 tablespoons balsamic vinegar

2 tablespoons grated Parmesan cheese (optional for extra flavor)

Fresh chives or parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature is crucial for achieving that perfect crispy texture.

Prepare the Brussels Sprouts: Rinse the Brussels sprouts under cold water, trim the stem ends, and cut them in half. If any leaves fall off during trimming, keep them for roasting as they crisp up nicely.

Season Them Up: In a large mixing bowl, combine the halved Brussels sprouts, olive oil, sea salt, black pepper, garlic powder, smoked paprika, and red pepper flakes. Toss everything together until the sprouts are evenly coated.

Arrange on Baking Sheet: Spread the seasoned Brussels sprouts on a large baking sheet in a single layer, making sure they are not overcrowded. This will help them roast evenly and crisp up!

Roast: Place the baking sheet in the preheated oven and roast for about 20-25 minutes. Halfway through the cooking time, give the Brussels sprouts a good toss to ensure even browning.

Add Balsamic & Cheese: When the Brussels sprouts are golden and crispy, remove them from the oven and drizzle with balsamic vinegar. If you're using Parmesan cheese, sprinkle it now while they’re still hot for it to melt slightly.

Garnish and Serve: Transfer the Brussels sprouts to a serving dish. Garnish with freshly chopped chives or parsley for a pop of color and flavor. Serve immediately while they’re still crispy!
