Crispy Ranch Chicken Tender Wraps

1 lb (450g) chicken tenders

1 cup buttermilk

1 cup breadcrumbs (panko for extra crunch)

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tsp dried parsley

Salt and pepper to taste

Vegetable oil (for frying)

4 large flour tortillas

1 cup shredded lettuce

1 medium tomato, diced

1/2 cup shredded cheddar cheese

1/2 cup ranch dressing

Marinate the Chicken: In a medium bowl, soak the chicken tenders in buttermilk for at least 30 minutes to tenderize and add flavor. For the best results, marinate them for up to 2 hours in the fridge.

    Prepare the Breading: In a shallow dish, combine breadcrumbs, flour, garlic powder, onion powder, paprika, dried parsley, salt, and pepper. Mix well.

      Bread the Chicken: Remove the chicken tenders from the buttermilk, allowing excess to drip off. Dredge each tender in the breadcrumb mixture, pressing gently to adhere the crumbs well.

        Fry the Tenders: Heat vegetable oil in a large skillet over medium heat. Once hot (you can test it by dropping a crumb in; it should sizzle), fry the chicken tenders in batches until golden brown and crispy, about 3-4 minutes per side. Ensure they reach an internal temperature of 165°F (75°C). Remove and place on a paper towel-lined plate to drain.

          Assemble the Wraps: Lay out a tortilla on a clean surface. In the center, add a layer of shredded lettuce, followed by a few chicken tenders, diced tomatoes, shredded cheese, and a drizzle of ranch dressing.

            Wrap It Up: Fold the sides of the tortilla inwards and then roll from the bottom up to securely enclose the filling. Repeat with the remaining tortillas and ingredients.

              Serve: Cut each wrap in half diagonally and serve immediately with extra ranch dressing on the side for dipping.
