4 medium-sized russet potatoes, thinly sliced

1 cup grated Parmesan cheese

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1 jalapeño, sliced (optional)

1 cup cooked black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 avocado, diced

½ cup diced tomatoes

¼ cup sliced green onions

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving

Instructions
 

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Rinse the thinly sliced potatoes under cold water to remove excess starch, then pat them dry with a clean towel.

    Season & Bake: In a large mixing bowl, combine the sliced potatoes, olive oil, garlic powder, paprika, salt, and pepper. Toss until the potatoes are evenly coated. Spread them in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

      Add Cheeses: Remove the crispy potato slices from the oven. Reduce the oven temperature to 375°F (190°C). Layer the baked potato slices in a large oven-safe skillet. Sprinkle evenly with grated Parmesan cheese followed by shredded cheddar cheese.

        Layer Toppings: Evenly distribute the black beans, corn kernels, and sliced jalapeños (if using) over the cheese layer.

          Bake Again: Return the skillet to the oven and bake for an additional 10-15 minutes, or until the cheese is fully melted and bubbly.
