1 large eggplant

1 cup breadcrumbs (panko recommended for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

3 tablespoons all-purpose flour

Cooking spray or olive oil for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Eggplant: Rinse the eggplant and slice it into sticks, approximately 1/2 inch thick. If desired, you can sprinkle a little salt on the sticks and let them sit for 15 minutes to draw out excess moisture and bitterness, then pat them dry with a paper towel.

      Set Up Breading Station: In three separate bowls, prepare the breading station:

        - In the first bowl, place the flour.

          - In the second bowl, beat the eggs until well mixed.

            - In the third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, salt, and black pepper.

              Coat the Eggplant Sticks: Start by dredging an eggplant stick in the flour, shaking off any excess. Then, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the stick in the breadcrumb mixture, pressing gently to adhere. Place the coated stick on the prepared baking sheet. Repeat this process with all eggplant sticks.

                Bake: Once all the eggplant sticks are on the baking sheet, lightly spray or drizzle them with olive oil to ensure they crisp up nicely. Bake in the preheated oven for 20-25 minutes or until they are golden brown and crispy, flipping them halfway through for even cooking.

                  Serve: Once done, remove them from the oven and let cool slightly. Serve hot with your favorite dipping sauce, such as marinara or ranch dressing.
