4 large carrots, peeled and thinly sliced

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup cooked black beans (drained and rinsed)

1/2 cup chopped ripe avocado

1/2 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1/2 cup sour cream or Greek yogurt (for drizzling)

Jalapeño slices (optional, for spice)

Instructions
 

Prep the Carrots: Preheat your oven to 425°F (220°C). In a large bowl, combine sliced carrots with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.

    Bake the Chips: Spread the seasoned carrot slices out in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until the carrot chips are crispy and golden-brown.
