4 tilapia fillets (about 6 ounces each)

1 cup all-purpose flour

2 large eggs

2 tablespoons Dijon mustard

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/4 cup olive oil (for frying)

Lemon wedges (for serving)

Fresh parsley, chopped (for garnish)

Prepare the Coating: In a shallow bowl, combine the flour, garlic powder, onion powder, paprika, salt, and pepper. In another bowl, whisk together the eggs and Dijon mustard until smooth. In a third bowl, mix the panko breadcrumbs with the grated Parmesan cheese.

    Coat the Fish: Dip each tilapia fillet first into the flour mixture, ensuring it’s fully coated. Shake off any excess. Next, dip it into the egg mixture, and finally, press it into the panko mixture until well-coated on both sides.

      Heat the Oil: In a large non-stick skillet, heat olive oil over medium-high heat. You want enough oil to lightly cover the bottom of the pan.

        Cook the Fish: Once the oil is hot (but not smoking), carefully place the coated tilapia fillets in the skillet. Fry for about 3-4 minutes on each side, or until the fish is golden brown and crispy. Avoid overcrowding the pan; you may need to cook in batches.
