4 cod fillets (about 6 oz each)

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 large eggs

1 tablespoon Dijon mustard

1 tablespoon olive oil

Lemon wedges (for serving)

For the Herb Sauce:

1/2 cup Greek yogurt

1 tablespoon mayonnaise

1 tablespoon fresh lemon juice

1 tablespoon fresh parsley, chopped

1 teaspoon fresh dill, chopped

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Coating: In a bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, chopped dill, garlic powder, onion powder, salt, and pepper. Mix well to combine all the ingredients.

      Egg Mixture: In a separate bowl, whisk together the eggs and Dijon mustard until smooth. This mixture will help the panko adhere to the fish.
