Crispy Nacho Cheese Cauliflower

1 medium head of cauliflower, cut into bite-sized florets

1 cup of sharp cheddar cheese, shredded

1 cup of panko breadcrumbs

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

¼ cup fresh parsley, chopped (for garnish)

Optional: sliced jalapeños for extra heat

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Breading Station: In one bowl, whisk the eggs together. In a second bowl, combine panko breadcrumbs, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper.

      Coat the Cauliflower: Dip each cauliflower floret into the egg mixture, allowing excess to drip off, then roll into the breadcrumb mixture ensuring it’s fully coated.

        Arrange on Baking Sheet: Place the coated cauliflower florets in a single layer on the prepared baking sheet. Make sure they are spaced out for even crispiness.

          Sprinkle Cheese: After all the florets are on the sheet, generously sprinkle the shredded cheddar cheese over the top.

            Bake: Bake in the preheated oven for about 25-30 minutes or until the cauliflower is tender and the panko is golden brown and crispy.

              Garnish and Serve: Once baked, remove from the oven and let cool for a few minutes before garnishing with fresh parsley and optional sliced jalapeños for an added spicy kick.
