4 tablespoons olive oil

2 teaspoons dried rosemary

2 teaspoons dried thyme

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Start by washing and scrubbing the russet potatoes. Cut each potato into wedges, ensuring they are of similar size for even cooking.

    Parboil (Optional): For extra crispiness, parboil the potato wedges. Bring a large pot of salted water to a boil, add the wedges, and cook for 5-7 minutes until slightly tender but not fully cooked. Drain and let dry.

      Season the Wedges: In a large mixing bowl, combine the olive oil, dried rosemary, dried thyme, garlic powder, onion powder, salt, and pepper. Add the potato wedges and toss until they're evenly coated with the seasoning mix.

        Heat the Skillet: Preheat a large cast-iron skillet over medium-high heat. Add a tablespoon of olive oil and spread it around to coat the skillet.

          Cook the Wedges: Place the seasoned potato wedges into the skillet in a single layer. Avoid overcrowding, so they can crisp nicely. Cook for about 5-7 minutes on one side until golden brown.
