1 block (14 oz) firm tofu, pressed and cubed

3 tablespoons cornstarch

3 tablespoons vegetable oil (for frying)

4 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon maple syrup or honey

1 teaspoon sesame oil

2 cups cooked brown rice or quinoa

1 cup broccoli florets

1 carrot, julienned

1 red bell pepper, sliced

1 avocado, sliced

2 green onions, chopped

Sesame seeds for garnish

Salt and pepper to taste

Prep the Tofu: Press the tofu for at least 30 minutes to remove excess moisture. Once pressed, cut it into bite-sized cubes and place them in a bowl.

    Coat the Tofu: Sprinkle the cornstarch over the tofu cubes and toss gently until they are evenly coated. This will help create a crispy texture when frying.

      Pan-Fry the Tofu: Heat the vegetable oil in a large non-stick skillet over medium-high heat. Once hot, add the tofu cubes in a single layer. Fry for about 3-4 minutes on each side until they are golden brown and crispy. Remove the tofu from the skillet and set it aside on a paper towel-lined plate to absorb any excess oil.
