4 large russet potatoes

1/4 cup olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded sharp cheddar cheese

1/2 cup crumbled crispy bacon (optional)

3 green onions, sliced (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Scrub the potatoes under running water to remove any dirt. Pat them dry with a paper towel.

      Bake the Potatoes: Poke several holes in each potato with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender. To check, insert a fork into the potato; it should slide in easily.

        Cool and Cut: Once baked, carefully remove the potatoes from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch of potato for structure (you can save the scooped-out potato for another use, like mashed potatoes).

          Season: In a large bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Brush this mixture generously over the insides of the potato skins.

            Crisp Them Up: Place the potato skins cut-side down on a baking sheet. Bake in the preheated oven for 10-15 minutes until the edges are crispy.

              Add Cheese and Bacon: Flip the potato skins over, sprinkle the shredded cheese and crumbled bacon (if using) into each skin, and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven and allow to cool for a couple of minutes. Top with sliced green onions and serve with a side of sour cream for dipping.
