Ingredients

1 lb Brussels sprouts, trimmed and halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1/2 cup grated Parmesan cheese

2 tablespoons balsamic vinegar (optional)

Fresh parsley, chopped, for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with olive oil, minced garlic, salt, black pepper, and smoked paprika. Toss until they are well-coated.

Arrange on Baking Sheet: Spread the Brussels sprouts out in a single layer on the prepared baking sheet. Make sure they are not overcrowded, which will help them crisp up nicely.

Roasting: Roast the Brussels sprouts in the preheated oven for about 20-25 minutes, turning them halfway through for even cooking. They should be golden brown and crispy on the edges.

Add Cheese: In the last 5 minutes of cooking, sprinkle the grated Parmesan cheese evenly over the Brussels sprouts and return them to the oven until the cheese is melted and slightly crispy.

Finish and Serve: If desired, drizzle with balsamic vinegar just after removing from the oven. Garnish with chopped fresh parsley for a touch of color and freshness.

Enjoy! Serve hot as a delicious side dish or a healthy snack.
