For the Falafel:

1 cup dried chickpeas (soaked overnight)

1 small onion, chopped

2 garlic cloves, minced

1 small bunch fresh parsley, chopped

1 small bunch fresh cilantro, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

Salt and pepper to taste

Oil for frying (vegetable or canola)

For the Wrap:

4 large whole wheat tortillas or pita breads

1 cup shredded lettuce

1 medium cucumber, diced

1 large tomato, diced

1/2 red onion, thinly sliced

1/2 cup hummus

1/4 cup tahini sauce or yogurt sauce (optional for drizzling)

Lemon wedges for serving

Instructions
 

Prepare the Falafel Mixture:

    - Drain and rinse the soaked chickpeas well. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is coarsely blended but not puréed. Scrape the sides of the processor as needed.

      Form the Falafel Balls:

        - Place the mixture in a bowl and refrigerate for about 30 minutes to firm up. Once chilled, form small balls or patties (about the size of a golf ball).

          Fry the Falafel:

            - In a deep skillet, heat about 2 inches of oil over medium heat. Once hot, carefully add falafel balls (do this in batches to avoid overcrowding) and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

              Assemble the Wraps:

                - Spread a generous layer of hummus on each tortilla or pita. Layer with shredded lettuce, diced cucumber, tomato, and red onion. Add 3-4 falafel balls on top.

                  Drizzle and Roll:

                    - If desired, drizzle with tahini sauce or yogurt sauce, and squeeze some fresh lemon juice over the filling. Roll the wrap tightly from one end to the other, tucking in the sides as you go to keep the filling secure.

                      Serve:
