1 can (15 oz) chickpeas, drained and rinsed

1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 tsp ground cumin

1/2 tsp baking powder

Salt and pepper, to taste

1/2 cup breadcrumbs (or chickpea flour for gluten-free)

Oil for frying (or cooking spray for baking)

For the Sweet Potatoes:

4 medium sweet potatoes

Olive oil, for drizzling

Salt and pepper, to taste

For the Tahini Sauce:

1/4 cup tahini

2 tbsp lemon juice

1 clove garlic, minced

Water, as needed for consistency

Salt, to taste

Optional Toppings:

Fresh cucumber, diced

Chopped tomatoes

Sliced red onion

Chopped green onions

Crumbled feta cheese

Extra parsley for garnish

Cook the Sweet Potatoes: Preheat the oven to 400°F (200°C). Scrub the sweet potatoes clean, then pierce each several times with a fork. Rub them with olive oil and sprinkle with salt. Place on a baking sheet and roast for 45-60 minutes, until tender.

    Prepare the Falafel Mixture: In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is well combined but still slightly chunky. Transfer to a bowl and mix in breadcrumbs.

      Shape Falafel: With wet hands, form small balls or patties from the falafel mixture (about 2 tablespoons each). Place on a lined baking sheet.

        Cook the Falafel:

          - For Frying: Heat oil in a frying pan over medium heat. Fry the falafel balls for 3-4 minutes on each side until golden brown and crispy. Drain on paper towels.

            - For Baking: Preheat the oven to 375°F (190°C), spray falafel with cooking spray, and bake for 20-25 minutes, flipping halfway through, until crispy.

              Make the Tahini Sauce: Whisk together tahini, lemon juice, minced garlic, and a pinch of salt in a small bowl. Add water gradually until you reach desired consistency. Adjust seasoning to taste.
