1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs, beaten

1 cup shredded unsweetened coconut

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/2 teaspoon cayenne pepper (optional, for spice)

Vegetable oil for frying

Optional: Sweet chili sauce or honey for dipping

Prepare the Chicken: In a large mixing bowl, season the chicken pieces with salt, pepper, garlic powder, onion powder, and paprika. If desired, add the cayenne pepper for a kick. Toss to coat the chicken evenly with the seasoning.

    Set Up the Breading Station: Set up three shallow bowls on your countertop. In the first bowl, place the flour. In the second bowl, add the beaten eggs. In the third bowl, combine the shredded coconut and panko breadcrumbs.
