2 large chicken breasts, thinly sliced

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 ripe avocados, sliced

1 cup fresh spinach or mixed greens

4 large whole wheat tortillas

½ cup ranch dressing or your favorite sauce

Cooking oil for frying

Marinate the Chicken: In a bowl, soak the sliced chicken breasts in buttermilk for at least 30 minutes to tenderize and add flavor.

    Prepare Breading Stations: In one shallow bowl, combine flour, paprika, garlic powder, onion powder, salt, and pepper. In another bowl, place the panko breadcrumbs.

      Bread the Chicken: Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, shaking off the excess, then dip back into the buttermilk before coating with panko breadcrumbs, pressing down lightly to adhere.

        Fry the Chicken: In a large skillet, heat enough oil to cover the bottom over medium-high heat. Fry the breaded chicken pieces in batches until golden brown and crispy, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

          Assemble the Wraps: Lay out the tortillas on a flat surface. Spread a generous tablespoon of ranch dressing on each tortilla. Add a layer of fresh spinach, a few slices of avocado, and then top with the crispy chicken.
