2 cups cooked jasmine rice

2 large chicken breasts, thinly sliced

1 cup panko breadcrumbs

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

2 large avocados, sliced

1 cup shredded carrots

1 cup baby spinach

4 large rice paper sheets

2 tablespoons sesame oil

Fresh cilantro for garnish

Soy sauce or sweet chili sauce for dipping

Instructions
 

Prepare the Chicken:

    - In a bowl, combine the panko breadcrumbs, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

      - Dip each chicken slice in sesame oil and then coat it evenly with the breadcrumb mixture.

        Cook the Chicken:

          - Heat a non-stick skillet over medium heat. Add a drizzle of sesame oil.

            - Once hot, add the coated chicken slices in batches. Fry for about 3-4 minutes per side, or until golden brown and crispy. Remove and set aside on a paper towel-lined plate.

              Assemble the Wraps:

                - In a large bowl, prepare the rice paper sheets by soaking them one at a time in warm water for about 10-15 seconds until soft.

                  - Lay the softened rice paper on a clean surface.

                    - On the lower third of the rice paper, layer a scoop of jasmine rice, a few crispy chicken slices, avocado slices, shredded carrots, and baby spinach.

                      Roll the Wraps:

                        - Fold the sides of the rice paper inwards over the filling, then roll from the bottom up tightly until completely wrapped. Repeat this process for the remaining rice papers and filling.

                          Serve:

                            - Slice each wrap in half diagonally for a beautiful presentation. Arrange on a platter, garnish with fresh cilantro, and serve with soy sauce or sweet chili sauce for dipping.
