Crispy Chicken and Cheese Taquitos

2 cups cooked shredded chicken (about 1 large chicken breast)

1 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup cream cheese, softened

1/2 cup black beans, rinsed and drained

1/4 cup fresh cilantro, chopped

1 tsp ground cumin

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

12 small corn tortillas

Vegetable oil, for frying

Optional toppings: guacamole, salsa, sour cream, lime wedges

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cheese, cream cheese, black beans, cilantro, cumin, garlic powder, onion powder, salt, and pepper. Mix well until all the ingredients are combined.

    Heat the Tortillas: In a dry skillet over medium heat, warm the corn tortillas one at a time for about 30 seconds on each side until they are pliable. This step prevents the tortillas from cracking when you roll them.

      Fill the Tortillas: Place 2-3 tablespoons of the chicken and cheese mixture in the center of each tortilla. Roll them tightly, folding in the sides to secure the filling, and place seam-side down on a plate.

        Heat the Oil: In a large, deep skillet or frying pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).

          Fry the Taquitos: Working in batches, carefully place the rolled taquitos seam-side down in the hot oil. Fry them for about 3-4 minutes on each side until golden brown and crispy. Use tongs to carefully turn them.

            Drain the Taquitos: Once fried, remove the taquitos from the oil and place them on a plate lined with paper towels to drain any excess oil.

              Serve: Serve the crispy taquitos hot with your choice of optional toppings, such as guacamole, salsa, sour cream, and lime wedges for a burst of flavor.
