Prep the Broccoli: Begin by bringing a pot of water to a boil. Add the fresh broccoli florets and blanch for about 2-3 minutes until bright green and slightly tender. Drain and plunge them into an ice water bath to stop the cooking process. Once cool, drain well and chop finely.
Mix Ingredients: In a large mixing bowl, combine the finely chopped broccoli, sharp cheddar cheese, Parmesan cheese, breadcrumbs, flour, beaten egg, minced garlic, onion powder, paprika, salt, and pepper. Mix until all ingredients are thoroughly combined – the mixture should be slightly sticky but still hold shape when formed into a tot.
Shape the Tots: Preheat your oven to 400. Line a baking sheet with parchment paper and lightly grease it with olive oil or cooking spray. Using your hands, scoop out a heaping tablespoon of the mixture and form it into a small tot shape. Repeat until all the mixture is formed into tots, spacing them about 1 inch apart on the prepared baking sheet.
Bake for Crispy Awesomeness: Bake the tots in the preheated oven for 20-25 minutes, flipping halfway through. They should be golden brown and crispy on the outside.
Serve: Once out of the oven, let your crispy cheesy broccoli tots cool for a few minutes. Serve warm with your favorite dipping sauce and enjoy your delectable snack attack!
