Ingredients

2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

2 large eggs

Cooking spray or olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Zucchini: Wash the zucchinis and trim the ends. Cut each zucchini in half, then slice each half into fries about 1/4-inch wide.

Set Up Breading Station: In a shallow bowl, whisk the eggs until well beaten. In another bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, pepper, and Italian seasoning.

Bread the Zucchini Fries: Dip each zucchini fry first into the beaten eggs, allowing any excess to drip off, and then coat it evenly in the breadcrumb mixture. Place the breaded fries on the prepared baking sheet in a single layer.

Add a Crunchy Finish: Lightly spray or drizzle olive oil over the coated zucchini fries to help them crisp up in the oven.

Bake the Fries: Bake in the preheated oven for 20-25 minutes or until golden brown and crispy. You can flip them halfway through for even cooking.

Cool and Serve: Remove from the oven and let them cool for a minute. Serve warm with your favorite dipping sauce, such as marinara, ranch, or garlic aioli!
