Ingredients

1 block (200g) of feta cheese

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional for spice)

Zest of 1 lemon

Freshly ground black pepper, to taste

1/4 cup all-purpose flour

2 large eggs

1 tablespoon olive oil

Fresh parsley, finely chopped, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Feta: Drain the block of feta cheese and gently press it between paper towels to remove excess moisture. Cut the feta into cubes (approximately 1 inch).

Make the Breading: In a mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, dried oregano, garlic powder, red pepper flakes, lemon zest, and a pinch of black pepper. Mix well to combine all the dry ingredients.

Set Up the Breading Stations: Prepare three shallow bowls: one with flour, another with beaten eggs, and the last containing the seasoned breadcrumb mixture.

Bread the Feta: Roll each feta cube first in the flour, shaking off any excess. Next, dip it into the beaten eggs, allowing any extra egg to drip off. Finally, coat the cube with the panko mixture, pressing gently to adhere. Repeat until all feta cubes are breaded.

Arrange on Baking Sheet: Place the breaded feta cubes on the prepared baking sheet. Drizzle the olive oil over the top for added crispiness.

Bake: Bake in the preheated oven for 20-25 minutes or until the cubes are golden brown and crispy.

Garnish and Serve: Remove from the oven and let cool for a few minutes. Sprinkle with fresh parsley before serving. Enjoy your crispy baked feta crust cubes as a delicious appetizer or snack!
