Crispy Bacon & Egg Breakfast Grilled Cheese

4 slices of sourdough bread

4 slices of sharp cheddar cheese

4 slices of crispy bacon

2 large eggs

2 tablespoons unsalted butter, softened

Salt and pepper, to taste

Optional: Hot sauce or ketchup for serving

Instructions
 

Cook the Bacon: In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and let them drain on paper towels.

    Fry the Eggs: In the same skillet, crack in the eggs. Season with salt and pepper. Fry them sunny-side up or to your desired doneness. Set aside.

      Assemble the Sandwiches: Take two slices of sourdough and spread a tablespoon of softened butter on one side of each slice. On the unbuttered side, layer two slices of cheddar cheese, followed by two crispy bacon slices and one fried egg. Top with another slice of cheddar and place another slice of sourdough on top, buttered side up.

        Grill: Preheat the skillet over medium-low heat. Carefully place the sandwich in the skillet. Grill for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt. Flip carefully and grill the other side for an additional 3-4 minutes.

          Finish and Serve: Once both sides are crispy and the cheese is melted, remove the sandwich from the skillet. Let it cool for a minute before slicing in half. Serve hot with a side of hot sauce or ketchup, if desired.
