2 medium zucchinis

1 cup breadcrumbs (panko recommended for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 large egg

1 tablespoon olive oil (optional for added richness)

Prep the Zucchini: Begin by washing and drying the zucchinis. Cut off the ends, then slice them into thin rounds, about ¼ inch thick. Place the slices on a kitchen towel or paper towel and sprinkle with a little salt. Let them sit for about 15 minutes to draw out moisture.

    Make the Coating: In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix thoroughly until well combined.

      Prepare the Egg Wash: In another bowl, beat the egg with the olive oil (if using) until fully blended. This helps the breadcrumbs stick to the zucchini.

        Coat the Zucchini Slices: Pat the zucchini slices dry to remove any excess moisture. Dip each slice first into the egg wash, letting the excess drip off, then coat generously with the breadcrumb mixture.

          Air Fry the Chips: Preheat your air fryer to 400°F (200°C). Arrange the breaded zucchini slices in a single layer in the air fryer basket. Be careful not to overcrowd; you may need to do this in batches.

            Cook: Air fry the zucchini chips for 10-12 minutes, flipping halfway through, until they are golden brown and crispy. Keep an eye on them to avoid burning.
