Crispy Air-Fryer Taco Rolls

Ingredients
  

1 lb ground beef or turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1 cup black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 cup shredded cheddar cheese

1 cup cream cheese, softened

8 large flour tortillas

Cooking spray or olive oil

Fresh cilantro, for garnish

Salsa or guacamole, for serving (optional)

Instructions
 

Cook the Meat: In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté until fragrant and the onion is translucent, about 3-5 minutes. Add the ground beef or turkey and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.

    Add Seasoning and Ingredients: Stir in the taco seasoning according to package instructions (or your own mix). Add black beans and corn, mixing well. Cook for an additional 2-3 minutes until heated through. Remove from heat and stir in the shredded cheddar cheese and softened cream cheese until melted and combined.

      Prepare the Tortillas: Lay a flour tortilla flat on a clean surface. Spoon a generous amount of the meat filling into the center of the tortilla, about 2-3 tablespoons. Fold the bottom of the tortilla up over the filling, then fold in the sides, and roll tightly to form a wrap. Repeat with remaining tortillas.

        Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Air-Fry the Taco Rolls: Lightly spray or brush the outside of each taco roll with cooking spray or olive oil to help them crisp up. Place them seam-side down in the air fryer basket, making sure to not overcrowd the basket; you may need to do this in batches. Air-fry for 8-10 minutes, flipping halfway through, until the rolls are golden brown and crispy.

            Serve: Once crispy, remove from the air fryer and let cool for a minute. Serve with fresh cilantro and your favorite salsa or guacamole for dipping.
