3 cloves garlic, minced

1 medium potato, peeled and diced

4 cups vegetable broth

2 tablespoons olive oil

1/2 teaspoon dried thyme

1/2 teaspoon dried basil

Fresh herbs (like chives or parsley), for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Then, add the minced garlic and sauté for an additional minute, until fragrant.
