8 oz elbow macaroni (gluten-free if desired)

1 cup raw cashews (soaked in water for 4 hours)

1/2 cup nutritional yeast

1/4 cup lemon juice

1 clove garlic (minced)

1/2 tsp onion powder

1/2 tsp smoked paprika

1 tsp Dijon mustard

1/2 cup unsweetened plant-based milk (almond, soy, or oat)

Salt and pepper to taste

1 cup steamed cauliflower florets (optional for a thicker sauce)

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: Begin by cooking the elbow macaroni according to the package instructions in a large pot of salted boiling water. Once al dente, drain and set aside.

    Prepare the Cashew Cream: Drain the soaked cashews and add them to a blender or food processor along with nutritional yeast, lemon juice, minced garlic, onion powder, smoked paprika, Dijon mustard, and plant-based milk. If using, add the steamed cauliflower florets for extra creaminess.

      Blend Until Smooth: Blend the mixture on high until you achieve a smooth and creamy consistency. If the sauce is too thick, you can add more plant-based milk a tablespoon at a time until it reaches your desired creaminess.
