2 cups canned white beans (cannellini or great northern), drained and rinsed

1 medium onion, diced

3 cloves garlic, minced

2 cups fresh spinach, roughly chopped

1 medium carrot, diced

1 stalk celery, diced

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer taste)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon Italian seasoning

Salt & pepper to taste

Fresh parsley, for garnish

Optional: Grated Parmesan cheese for serving

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are soft and the onion is translucent.

    Add Garlic and Herbs: Stir in the minced garlic, dried thyme, rosemary, and Italian seasoning. Cook for an additional minute until fragrant.

      Gather the Beans: Add the drained white beans and vegetable broth. Bring the mixture to a boil, then reduce to a simmer. Allow it to cook for about 15 minutes to let the flavors meld together.

        Blend for Creaminess: Using an immersion blender (or transferring to a blender in batches), blend the soup until creamy but still chunky. If you prefer it smoother, blend longer until fully pureed.
