Creamy Tomato Spinach Pasta

8 oz (about 225g) of your favorite pasta (penne or fusilli works great)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 cup (240ml) heavy cream or coconut cream for a lighter option

3 cups fresh baby spinach, roughly chopped

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

½ cup grated Parmesan cheese (plus extra for garnish)

Red pepper flakes for a spicy kick (optional)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Tomatoes and Cream: Pour in the diced tomatoes with their juices and bring to a simmer. Stir in the heavy cream. Make sure to combine well and allow it to cook for about 2-3 minutes until it thickens slightly.

        Season the Sauce: Add the dried basil, oregano, and season with salt and pepper to taste. If you like a little heat, sprinkle in some red pepper flakes. Stir to combine all ingredients.

          Incorporate Spinach: Add the chopped spinach to the skillet and stir until it's wilted and has reduced in volume (about 2-3 minutes).

            Combine Pasta and Sauce: Add the drained pasta to the sauce, tossing gently to coat. If the sauce is too thick, add the reserved pasta water a little at a time until you reach the desired consistency.

              Add Cheese: Sprinkle the grated Parmesan cheese over the pasta and mix well until melted and creamy.

                Serve and Garnish: Serve the pasta warm, garnished with extra Parmesan cheese and fresh basil leaves on top.
