1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 can (15 oz) diced tomatoes, with juices

1 cup fresh basil leaves, chopped

1 cup heavy cream (or coconut milk for a vegan option)

1 cup shredded mozzarella cheese (or dairy-free cheese)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 cloves garlic, minced

1 medium onion, finely chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 cup fresh spinach, chopped

Olive oil, for sautéing

Optional: extra basil and cheese for garnish

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Quinoa: In a medium saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer until quinoa is fluffy and all the liquid is absorbed (about 15 minutes). Set aside.

      Sauté the Vegetables: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Then, add the minced garlic, and cook for added aroma (1-2 minutes).

        Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, sautéed onions and garlic, diced tomatoes with juices, chopped basil, heavy cream, 1/2 cup of mozzarella cheese, Parmesan cheese, dried oregano, salt, and black pepper. Stir in the chopped spinach until evenly distributed.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Top with Cheese: Sprinkle the remaining mozzarella cheese on top of the quinoa mixture.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                Garnish and Serve: Remove from the oven, let it cool for a few minutes, then garnish with extra fresh basil and cheese if desired.
