Ingredients

4 boneless, skinless chicken breasts

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1 cup chicken broth

1 cup fresh basil leaves, chopped

3 cloves garlic, minced

1 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon Italian seasoning

Fresh basil leaves for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant. Make sure to scrape up any browned bits from the bottom of the pan for added flavor.

Make the Sauce: Add the chopped sun-dried tomatoes to the skillet and stir. Pour in the chicken broth and bring it to a gentle simmer. Let it cook for 2-3 minutes.

Add the Cream: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Mix well and let it simmer for another 3-4 minutes until the sauce thickens slightly.

Combine: Return the chicken breasts to the skillet, ensuring they are coated with the creamy sauce. Add the chopped fresh basil and stir gently to combine. Let it simmer for an additional 2-3 minutes so the chicken absorbs some flavors.

Serve: Transfer the chicken to a serving platter, spoon the creamy sun-dried tomato sauce generously over the top, and garnish with additional fresh basil leaves. Serve with pasta, rice, or crusty bread to soak up the sauce.
