12 oz fettuccine pasta

2 cups fresh spinach, roughly chopped

3 tablespoons unsalted butter

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt (to taste)

½ teaspoon black pepper (to taste)

¼ teaspoon nutmeg (freshly grated, optional)

2 tablespoons olive oil

¼ cup chopped sun-dried tomatoes (optional for added flavor)

Fresh parsley for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining, then set the pasta aside.

    Sauté Garlic and Spinach: In a large skillet, melt the butter and olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Add Spinach: Stir in the chopped spinach and cook for 2-3 minutes, until wilted and tender. If using sun-dried tomatoes, toss them in now to warm them up.

        Create the Sauce: Lower the heat and pour in the heavy cream. Mix well and let it simmer for 2-3 minutes. Gradually sprinkle in the grated Parmesan cheese while stirring continuously until the cheese melts and the sauce becomes smooth.

          Season the Sauce: Add salt, black pepper, and nutmeg (if using) to the sauce, adjusting to your taste. If the sauce is too thick, add a bit of the reserved pasta water a tablespoon at a time until you reach your desired consistency.
