Creamy Spinach Artichoke Pasta

12 oz pasta (fusilli or penne works great)

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, diced

1 can (14 oz) artichoke hearts, drained and roughly chopped

5 oz fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1 cup heavy cream

1 cup cream cheese, softened

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once heated, add the minced garlic and diced onion. Sauté for about 3-4 minutes until the onions are translucent and fragrant.

      Add Artichokes and Spinach: Stir in the chopped artichoke hearts and the fresh spinach. If using frozen spinach, add it alongside the artichokes. Cook for another 3-4 minutes until the spinach has wilted and everything is well combined.

        Make the Cream Sauce: Lower the heat, then add the heavy cream and softened cream cheese to the skillet. Stir until the cream cheese is fully melted and the mixture is well combined and creamy.

          Incorporate Cheese and Seasonings: Add the grated Parmesan cheese, garlic powder, onion powder, and red pepper flakes (if using). Stir until the cheese melts completely and the sauce thickens. Gradually add some reserved pasta water to thin the sauce to your desired consistency. Season with salt and pepper to taste.

            Combine Pasta with Sauce: Add the cooked pasta to the skillet and toss well until all the noodles are coated with the creamy sauce. Let it cook for an additional 2-3 minutes on low heat to heat everything through.
