8 oz (about 225g) penne pasta

1 lb (450g) Italian sausage, casings removed

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 small onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage. Use a wooden spoon to break it up into small pieces. Cook until browned and fully cooked, about 5-7 minutes. Remove excess grease if necessary.

      Sauté the Vegetables: To the same skillet with the sausage, add the diced onion and sliced bell peppers. Sauté for about 5-6 minutes, or until the vegetables are tender. Stir in the minced garlic and Italian seasoning, cooking for an additional 1-2 minutes.

        Create the Sauce: Lower the heat and pour in the chicken broth and heavy cream, stirring to combine. Let it simmer for 3-4 minutes to allow the flavors to meld.
