Creamy Roasted Red Pepper Penne

12 oz penne pasta

2 large red bell peppers

1 medium onion, chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Roast the peppers: Preheat your oven to 450°F (230°C). Cut the red bell peppers in half, remove seeds and stems. Place them cut side down on a baking sheet lined with parchment paper. Roast in the oven for 20-25 minutes or until the skins are charred and blistered. Remove from the oven and let cool. Once cooled, peel the skins off and set aside.

    Cook the pasta: While the peppers are roasting, cook the penne pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

      Prepare the sauce: In a large skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and sauté for another minute until fragrant.

        Blend the peppers: In a blender, combine the roasted red peppers, sautéed onion and garlic, vegetable broth, Italian seasoning, salt, and pepper. Blend until smooth and creamy.

          Combine with cream: Pour the blended red pepper mixture back into the skillet. Stir in the heavy cream and bring to a gentle simmer. Allow the sauce to thicken slightly, about 5 minutes. Stir in the grated Parmesan cheese until melted and fully incorporated.

            Toss the pasta: Add the cooked penne pasta to the skillet and toss well to coat in the creamy red pepper sauce. Adjust seasoning with more salt and pepper if desired.

              Serve: Plate the creamy roasted red pepper penne and garnish with fresh basil and additional Parmesan cheese if desired.
