1 head of garlic

3 tablespoons olive oil

12 ounces fettuccine pasta

2 cups heavy cream

1 cup grated Parmesan cheese

1 tablespoon unsalted butter

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Extra Parmesan cheese, for serving

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the individual cloves. Drizzle olive oil over the exposed cloves, wrap the head in aluminum foil, and roast for about 30-35 minutes or until the cloves are soft and caramelized. Remove from oven and let cool slightly.

    Cook the Fettuccine: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

      Prepare the Alfredo Sauce: In a large skillet over medium heat, melt the butter. Squeeze the roasted garlic cloves into the skillet, using the back of a spoon to mash them down. Cook for a minute until fragrant.

        Add Cream and Cheese: Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese and Italian seasoning. Cook for about 3-5 minutes until the sauce is thickened. If it becomes too thick, add a bit of the reserved pasta water to reach your desired consistency.

          Combine Pasta and Sauce: Add the cooked fettuccine to the skillet, tossing it gently in the creamy sauce to ensure the pasta is well-coated. Season with salt and pepper to taste.

            Serve: Plate the creamy roasted garlic Alfredo pasta, garnish with fresh parsley, and sprinkle additional Parmesan cheese on top for an extra layer of flavor.
