Creamy Roasted Beet Hummus

2 medium-sized beets, roasted and peeled

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil

2 tablespoons lemon juice (freshly squeezed)

1 clove garlic, minced

1 teaspoon ground cumin

Salt to taste

2-4 tablespoons water (as needed for consistency)

Fresh herbs (such as parsley or dill) for garnish

Extra olive oil for drizzling on top

Roast the Beets: Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil and place them on a baking sheet. Roast for about 45 minutes to 1 hour, or until tender when pierced with a fork. Let them cool, then peel and chop into chunks.

    Blend the Base: In a food processor, combine the roasted beets, chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, and a pinch of salt.

      Process to Creaminess: Pulse the mixture several times, then blend on high until smooth. If the hummus is too thick, slowly add water, one tablespoon at a time, blending until you reach your desired consistency.

        Taste and Adjust: Taste the hummus and adjust the seasoning if necessary, adding more salt, lemon juice, or cumin according to your preference.
