Creamy Greek Pasta Bake

12 oz (340g) penne pasta

2 cups (480ml) Greek yogurt

1 cup (240ml) heavy cream

1 cup (100g) feta cheese, crumbled

1 cup (120g) cherry tomatoes, halved

1 cup (120g) spinach, fresh or frozen (thawed and drained)

1/2 cup (60g) kalamata olives, pitted and sliced

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried dill

1/2 teaspoon red pepper flakes (optional, for heat)

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup (50g) mozzarella cheese, shredded (for topping)

2 tablespoons olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta until al dente according to package instructions. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Combine Ingredients: In a large bowl, combine the cooked penne pasta, sautéed onion and garlic, Greek yogurt, heavy cream, crumbled feta cheese, cherry tomatoes, spinach, kalamata olives, dried oregano, dried dill, red pepper flakes, salt, and black pepper. Mix everything gently until well combined.

          Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch (23x33 cm) baking dish, spreading it evenly.

            Add Cheese Topping: Sprinkle the shredded mozzarella cheese evenly on top of the pasta mixture.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                Serve: Remove from oven and let it cool for a few minutes before serving. Garnish with additional crumbled feta and fresh herbs if desired.
