When preparing fresh spinach, proper cooking techniques are essential to preserve its vibrant color and nutritional benefits. Start by thoroughly washing the spinach under cold water to remove any grit or dirt. After washing, it's best to use a salad spinner to remove excess moisture. This step is crucial as it prevents the spinach from becoming too soggy during cooking.

Ingredients

12 oz fresh or frozen ravioli (preferably spinach and ricotta)

2 tablespoons olive oil

4 cloves garlic, minced

1 cup fresh spinach, chopped

1 cup heavy cream

1 cup grated Parmesan cheese

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional, for a kick)

2 tablespoons fresh basil or parsley, finely chopped (for garnish)

Instructions

Cook the Ravioli: Bring a large pot of salted water to a boil. Add the ravioli and cook according to the package instructions (typically about 3-5 minutes for fresh ravioli). Once cooked, drain and set aside, reserving about ½ cup of the pasta water.

Sauté the Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

Add Spinach: Stir in the chopped spinach and cook for 2-3 minutes until wilted. If using fresh spinach, ensure it is fully cooked down before moving on to the next step.

Create the Cream Sauce: Pour the heavy cream into the skillet and bring it to a gentle simmer. Stir well and let it cook for about 3-4 minutes until it thickens slightly.

Incorporate Cheese: Gradually add the grated Parmesan cheese to the cream sauce, stirring continuously until the cheese is melted and the sauce is creamy.

Season: Season the sauce with salt, black pepper, and red pepper flakes (if using). Adjust seasoning to taste.

Combine Ravioli and Sauce: Carefully add the cooked ravioli to the skillet, gently tossing them in the creamy garlic sauce. If the sauce is too thick, add a little reserved pasta water until the desired consistency is achieved.

Serve: Remove from heat and plate the creamy garlic spinach ravioli. Garnish with fresh basil or parsley for a pop of color and extra flavor.

Enjoy: Serve immediately and enjoy your creamy, garlicky, spinach-filled delight!
